Established in Ile et Vilaine, an area known for andouilles (chitterling smoked sausage), the Atelier de l'Argoat is specialised in the manufacture of andouille and andouillette sausage made with utmost respect for traditional methods.

The company provides about 10% of annual andouille production in France. These high-end products, without preservatives or additives, are smoked with beech wood: traditional style andouille de Guémené, Vire Andouille, Breton Andouille smoked with beech wood, traditional Gridouille de l'Argoat, "Guémenoise" de l'Argoat and andouillette on a string.

Argoat has a loyal national clientele and sources all its ingredients from Brittany.

The chitterlings are salted using a special procedure elaborated by the company. No artificial casing is used. .
