The Hôtel du Palais was built in 1854. Originally named the Villa Eugénie, it was transformed into a luxury hotel and renamed in 1893.


They practice many aspects of catering (cocktail canapés), patisserie and culinary decoration (sugar icing sculptures, chocolate crafts). Food is served at the "Impératrice" restaurant (17.5 score from Gault et Millau) for gastronomic dining, at the "Villa Eugénie" for lunch or dinner in one of the finest dining rooms in Europe, and in "Le Jardin de L'Océan" for outdoor lunches with one of the finest views of Biarritz. All 3 restaurants serve the cuisine of Jean-Marie Gautier (Meilleur Ouvrier de France 1991).

The teams from all three restaurants are masters of the complex art of table-side service. The hotel also employs artisan cabinetmakers, wood decorators who excel in their expertise and employ a technique of paperboard decoration encrusted with pearl and black lacquered wood featuring multicoloured flower bouquet motifs. The curtains and bedspreads are carefully created and maintained in workshops by experienced artisan upholsterers. The company is a member of the Colbert Committee and Leading Hotels of the World, and is also part of the Belmond Group (formerly Orient Express).

The hote'ls Culinary team regularly acts as an ambassador for French expertise at "gastronomy weeks" with other "Leading Hotels of the World" members. Moscow, USA, Mexico, Buenos Aires, Dubai, Tokyo, Madrid, Berlin.
