The Hôtel du Palais was built in 1854. It was named Villa Eugénie at the time, and was turned into a luxury hotel and renamed in 1893.

Various different catering (cocktail canapés), and pastry and culinary decoration (sugar paste sculpture, chocolate creations) culinary arts are undertaken at the hotel. Guests may enjoy meals at three establishments: La "Villa Eugénie" (one star in the Michelin Guide) for a gourmet meal, La Rotonde for lunch or dinner facing the ocean and the "Hippocampe" for breakfast by the pool. The Head Barman (Best Barman in France in 1982) oversees the Bar Impérial. The 3 restaurants serve the cuisine of Jean-Marie Gautier (MOF 1991).

The teams of the three restaurants master the complex technique of table-side service (preparing food for serving at the table). The hotel also employs artisan cabinet makers, decorators working with wood who excel at their savoir-faire and who use decoration techniques in pressed cardboard incrusted with mother-of-pearl and black lacquered wood with a polychrome bouquet of flowers design. The net curtains and bed covers are looked after with utmost care or made in its workshops by experienced artisan upholsterers.

The company is a member of the Comité Colbert and Leading Hotels of the World, in addition to being a partner of the Belmond Group (formerly Orient Express).

The hotel’s kitchen team regularly acts as ambassador of French savoir-faire during "gastronomy weeks" in the member hotels of the "Leading Hotels of the World": Moscow, USA, Mexico, Buenos Aires, Dubai, Tokyo, Madrid, Berlin.
